Recipe: Pear and Nutella Pancakes

So since it's pancake day on tuesday, I thought it would be the perfect time to do a recipe for some pancakes for my fortnightly feature. I bought the latest copy of Delicious Magazine the other week and it had some lovely looking recipes so I thought I'd try the pear and chocolate one, but I made it much simpler, by using tinned pears and nutella! Yummy! 



Ingredients (makes 10):
150g plain flour
75g caster sugar
1 medium egg and 1 egg yolk
300ml whole milk
2tbsp melted butter
few drops of vanilla extract
pear halves
nutella
caster sugar

Method: 
1. Sift flour into bowl and add the sugar
2. Add the egg and yolk and stir, then add milk slowly
3. Add the melted butter and vanilla extract
4. Cook the pancakes over a medium heat
5. Warm the pear halves with some vanilla extract and caster sugar in a frying pan
6. Once pancakes are cooked, spread inside with nutella, then put 2 pear halves in each pancake
7. Fold over the pancakes and sprinkle over some more caster sugar.

You can do all sorts of toppings for example I made a raspberry and plum sauce for some the other week by mixing some raspberries, plums and caster sugar with some golden syrup until warm and gooey. And I even tried some cheese and ham ones the other week which were so nice! All you have to do is take out the caster sugar, and vanilla out of the recipe and add a pinch of salt. Once cooked, sprinkle some grated cheese (I used cheddar) inside the pancake with a couple slices of ham and fold over! Seriously it was one of the nicest pancakes I've ever had!
